A Freezer Miscalculation

Note to self: Always keep spare bags of cauliflower rice in the freezer. I thought I had an extra when I added cauli rice to a recipe earlier this week, but it turns out I didn’t. So I made 4 servings of Wild Rice in the rice cooker while preparing the sausage and green beans instead.

For my modifications, the bag of green beans I bought was 12 oz. rather than a pound… close enough. The instructions on the bag said to poke holes in the bag with a fork and microwave for 3-5 minutes. I put the bag of green beans on a plate and microwaved them for 4 minutes while cooking the sausage, and then just added them to the sausage pan afterward so they could soak up the fat from the sausage and the oil. Oh yeah, I’m currently using avocado oil instead of olive oil. Those are pretty interchangeable for me in recipes.

Overall this was a super fast and easy recipe to make! Had I used cauliflower rice rather than wild rice, I’m sure the total cook time would have been less than ChatGPT’s 20 minute estimate. I think ChatGPT also kind of oversold this meal in the description, with phrases like “succulent apple gouda sausage” and “an exciting mix of texture and flavors”, since really, the only added flavors on my end were salt and pepper. But hey, it was lightning fast, used up the sausages I’d had in my freezer, and will reheat well the next few days.

I was a bit impatient and hungry, so I ate some of my green beans and sausage while I was waiting on the rice. I forgot I had planned to take a photo once the whole meal was finished. In the end, I’m glad that I went with the wild rice instead of the cauliflower rice so that the meal would fill me up for a bit longer, too.
